Caesar Salad

Vegan Caesar Salad!  No dairy. No fish.

  • 1 cup soaked cashews (minimum soak of 1 hour in hot water or 3 hours in non-hot water)
  • 4 Tbsp rice vinegar
  • 2 Tbsp lemon juice
  • 2 Tbsp mustard
  • 1-2 cloves of garlic
  • 2 whole pitted dates or 2 Tbsp of Maple Syrup
  • 1 Tbsp kelp granules or dulse flakes for sea flavor (optional)
  • 1/4 cup Nutritional Yeast
  • 1/4 cup water
  • 1/2 tsp salt
  • Dash of pepper
  • A bit of olive oil

Blend.  Add water as needed.  Scrape down sides with a spatula.

Toss on romaine hearts, loosely torn into pieces.  Add capers (optional).  Serve with croutons or crusty bread.

Store leftover dressing in the fridge. It makes an excellent dip for raw veges!
