Egg Salad Sandwiches

A very simple and tasty recipe.  You can make enough to keep some extra on hand for more sandwiches.


  • Extra firm tofu
  • White onion
  • Vegan mayonaise
  • Dijon  Mustard
  • Salt & Pepper
  • Bread
  • Romaine Lettuce (optional)

Press out the extra water in the tofu.  Place it in a large enough bowl and mash it up with a fork or your hands. Toss in a finely diced white onion.  Spoon in and mix the vegan mayo into the mix until it is the proper consistency.  Add mustard to taste.  Season with salt and pepper.  You can also add chopped chives, cumin, nutmeg or curry powder.

Toast bread.  Spread salad mix.  Add some romaine lettuce leaves for crunch.  That is it!
