Ingredients:
- 3/4 cup earth balance butter
- 3-4 garlic cloves, minced
- 1/2 cup balsamic
- 1 package of gnocchi
- 1-2 Roma tomatoes, diced
- 1 bunch of kale, leaves removed and roughly chopped
- Salt and pepper
- Nutritional Yeast
Directions:
Reserve 2 tablespoons of butter for gnocchi
In a medium sauce pan add your remaining butter
Whisk over medium-high heat
Add in your garlic, continue to whisk until butter begins to brown
Remove from heat and add in 1/2 cup balsamic
Season with Salt and pepper
In a large frying pan, fry your gnocchi in 2 tablespoons reserved butter
After 5 minutes add in half your kale
Continue to fry until gnocchi is heated thoroughly and beginning to brown
Add sauce to gnocchi and remaining kale
Stir in your tomatoes
Sprinkle with nutritional yeast
