Simple hummus recipe. This particular recipe uses less oil and more lemon juice and tahini instead. To even make it lower oil, use the liquid from the chick pea can instead of the olive oil. You can also use non-canned chick peas. Soak 2 cups overnight, cook for about 10 minutes on the stove until tender.
- 1 can of garbanzo beans (chick peas)
- 1/4 cup lemon juice
- 1/4 cup tahini
- 1 garlic clove
- 2-3 tablespoons olive oil
- 1/2 teaspoon cumin
- dash of paprika (can also use smoked paprika)
- Cayenne to taste (optional)
Process in food processor until smooth
Serve with olive oil and paprika on top.
To make Red Hummus, same as above but add drained and chopped sun dried tomatoes.
To make Green Hummus, same as the basic hummus recipe, but add in chopped baby lettuce or kale.
