This creates a powder that can be easily made into a simple and quick “Mac-N-Cheese.”
- 1 cup of soaked cashews (soak a min of 1 hour in hot water, or 3 hours in cold water)
- 3/4 cup nutritional yeast
- 1/4 cup oat flour
- 1/4 cup tapioca flour
- 1 T sugar
- 2 tsp powdered mustard
- 2 tsp salt
If the cashews were soaking, drain off the liquid and pat dry.
Place all ingredients in a food processor and process for 3 minutes.
Store in a sealed container.
To make Mac-N-Cheese, add powder to a pan, add in almond milk and stir as it heats up. Use enough milk to get the right consistency. It will firm up when it starts to boil. Turn off heat and mix into cooked pasta.
