Mushroom Stroganoff

Ingredients
  • 1 package Extra Firm Tofu
  • 2 Tbls Lemon Juice
  • 1 Tbls Red Wine Vinegar
  • 1 clove garlic
  • 1/4 tsp salt
  • 1-2 Tbls of water for consistency
  • 1 box Penne Pasta
  • 2 8oz cartons of fresh mushrooms sliced
  • ½ medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons thyme
  • 1 teaspoon rosemary
  • ½ cup white wine
Instructions
  1. Boil the noodles according to package instructions
  2. Make the tofu sour cream by blending tofu, lemon juice, red wine vinegar, 1 clove of garlic, salt and water.  Add more water as needed.  Scrape sides of blender.
  3. Saute onion and garlic in a few tablespoons of oil until slightly soft.
  4. Stir in thyme and rosemary.
  5. Add fresh mushrooms and allow to cook down
  6. Stir in white wine until bubbly
  7. Stir in sour cream tofu mixture.
  8. Top drained noodles or rice with sauce
