Mushroom & Coconut Milk Stroganoff

This is a simple dish, made creamy with the addition of a can of coconut milk.

Ingredients

  • Box of mushrooms, sliced
  • Medium onion, chopped.
  • Olive oil
  • Can of coconut milk
  • 1 tsp vegan Worstershire sauce
  • Salt and pepper
  • Pasta or rice

Saute onions in a bit of olive oil.  When starting to soften, add sliced mushrooms.  Cook until soft.

Stir in can of coconut milk. Worstershire sauce.

Season to taste,

Serve or rice or pasta.
