Pot Pies

You can make a version of Chicken Pot Pies and replace the chicken with a number of items.  Mushrooms.  Pressed tofu.  Gardien chicken.  Etc.  In this version I am using Butler Soy Curls.


  • No Chicken Base
  • Butler Soy Curls, one package
  • 1 large onion, diced
  • 2-3 cloves garlic minced
  • 1 package of frozen veggie mix.
  • Flour
  • Bisquick (or make your own from scratch)
  • Almond Milk
  • salt and pepper
  • Optional:  thyme, parsley

Rehydrate the soy curls in warm water, drain and press out the water.

Make 3 cups of chicken broth using the No Chicken Base and water.

Sautee onions, when they start to get soft, add the garlic.  Once soft, add in 2 cups of of the froze veggie mix.  You can also use fresh veggies, canned veggies, but you mainly want corn, peas, carrots.
Add in rehydrated soy curls.

Mix bisquick using almond milk.  You want to use 3 cups of dry bisquick?

Roll out the biscuick dough to about 1/8″ thick.  Cut circles to fit your muffin pan.
Lightly grease the pan and place the dough circles in the cups.

Cut out smaller circles to make lids

Bake 350 degrees for 10 minutes?
