Simple Persian Bean Stew

  • 2 cups pinto beans, soak overnight
  • 4-5 carrots, diced coarse
  • 3-4 red potatoes cubed
  • One medium onion, diced
  • 2-3 tomatoes or one 8oz tomato sauce
  • Salt/pepper
  • dash lemon juice
    Sautee onion till near caramelized.  Cook beans separately, when nearly cooked add potatoes and carrots. When the potatoes and carrots are nearly cooked add the onions and tomato. At the end add lemon juice to taste.
