Spaghetti Squash

Spaghetti Squash is an amazing vegetable. The “meat” of the squash will come off in strands resembling pasta noodles and they taste great. It is a simple dish to prepare.

Preheat oven to 400 degrees F.

Use a larger sharp knife. Slice off the tips or ends of the squash. Place the now flat end on a cutting oboard and cut the squash in half lengthwise. Scoop out the seeds (save them). Lightly oil the inside of the squash. Sprinkle some salt and pepper on the inside. Place face down on a cooking sheet. I like to use a silicone matt, but you can also use parchment paper or make sure the pan is greased.

Cook for about 50 minutes. If this is a larger squash, cook for 60 minutes.

Take out of the oven, turn over, and “fluff” the interior with a fork.

You can eat the squash just as it is, or top with marinara, vegan sausage, etc.
