Stewed Zucchini, Squash, Tomato

This is a very tasty and simple dish to make and the amount of the ingredients do not matter much.

  • 1 or 2 small yellow squash
  • 3 or 4 small zucchini
  • 1 onion
  • 1 can of diced tomato (cane be fire roasted or not)
  • 3-4 cloves of garlic
  • Olive oil
  • Salt and pepper
  • Optional:  Parsley, Italian Seasoning

Mince the garlic, and dice the onion, zucchini, and squash

In a pot, with a little oil, saute the onions until soft.  Add in the garlic.  Cook for a couple minutes.

Add in the rest of the ingredients.  Add in enough water to cover.  Simmer for 30-45 minutes until veggies are tender.  If it starts to dry out, add a touch more water.  At the end of the cooking, some liquid is fine, but we are not looking for a soup. Season as needed and serve with mashed potatoes or good bread.
