Black Bean Burgers

4 cups cooked black beans
2 onions small diced
2-3 tablespoons canola oil
1/4 cup flour
1 teaspoon cumin
3 tablespoons cilantro
1 cup cooked brown rice
2 teaspoon salt
pepper to taste
1. To caramelize onions, place a sauté pan on medium high heat add in oil followed by onion. Keep the heat on medium-high, stirring often to prevent burning. Once you start to develop color on the onion, turn the heat to low. Be sure to keep stirring onions so they can build color and flavor without burning. If needed, add in a tablespoon of water at a time to parts of the pan that are starting to stick. Continue this for 30 minutes. The longer you cook onions the more they caramelize, the more flavor they build.
2. In a large bowl, add in beans and salt, using your hands squeeze the beans to smash them slightly. Then add in brown rice, cilantro, cumin and pepper to taste. Mix well and set aside until onions are ready.
3. Add onions into bean mixture when done then sprinkle in flour and mix thoroughly. If needed add in more and more flour, until you are able to make a strong patty that will hold its shape.
4. Form into preferred size patties and cook in oven on baking lined with parchment sheet for 20 minutes at 400ºF or in a pan with a little oil (to avoid sticking) on medium heat until both sides are crispy.
5. Serve as you would your favorite burger! Spread vegan mayo on both sides of a burger bun then gently place patty on top of the bottom bun, followed with a slice of vegan cheese, sliced tomatoes and lettuce.
