Butter Cake

1 box Duncan Hines Yellow Cake Mix (already accidentally vegan)
1.5 c soft tofu – drained and divided
8 oz vegan cream cheese
1 c. Vegan butter softened – divided
2 tsp vanilla – divided
1 tsp almond extract
2 c. Powdered sugar – plus extra for top

Preheat oven to 350°
In bowl mix with hand mixer the cake mix, 1/2 c. tofu, 1/2 c. vegan butter, 1 tsp vanilla. Consistency will be like playdough. Spread in 9×13 pan and press down evenly.
In mixing bowl, mix together remaining tofu, cream cheese, butter, vanilla, almond extract and powdered sugar. With hand mixer, mix until smooth. Pour on top of cake mixture. Bake for 40-50, or until golden brown. When completely cool, dust with a little powdered sugar.
