This is a base for many variations that one can make. Simple and quick, a dinner in under 15 minutes.
Ingredients:
- 1 package of spaghetti (other pasta can be used)
- Salt
- 1/4 cup olive oil
- 8 cloves of garlic, thinly sliced or minced
- Peperoncini (optional)
- 1 tsp Red pepper flakes
- 1/2 cup Fresh Parsley, chopped (can use basil)
Optional:
- Cherry tomatoes (sliced in half
- Sliced mushrooms
- Thinly sliced zucchini
- Sundried tomatoes
Instructions:
Bring pot of water to boil and add pasta. Do the rest while the pasta is cooking. Do not overcook as it will continue to cook later in the oil mix.
Heat olive oil in a skillet. Slice up garlic into very thin slices. Once oil is to temperature, add in garlic. Toss in red pepper flakes to oil. Use less to reduce spiciness. Add in peperoncini
If using other veggies, add to oil. Cook garlic until starting to turn brown.
Add in 1 cup of pasta water. Stir and simmer for 3-4 minutes.
Drain cooked pasta and add to the skillet. Toss while cooking.
Add in fresh parsley and stir to wilt.
Serve with crusty bread.
