Hot and Sour Soup

To be tweaked!


  • 6 cups Veggie Broth
  • 2 cups Shitake Mushrooms, thinly sliced
  • 1 package firm Tofu, cubed
  • 2 T Chili Paste
  • 2 T Soy Sauce
  • 2 T Apple Cider Vinegar
  • 2 T Cornstarch
  • 1 cup Soy Curls (shredded) or Textured Vegetable Protein or Crumbles (optional)
  • Green Onions (sliced)


In a large pot, heat up veggie broth.  Add mushrooms, tofu, and chili paste.  Bring to a boil and simmer for 5 minutes.

Add soy sauce, vinegar, and stir.
Mix cornstarch with cold water and then add to pot.  Stir.

Add in soy curls, or TVP, or crumbles… or any other meat replacement.  Stir.

Simmer for 5 minutes.  Serve with green onions on top.
