There are different ways to make a vegan omelet. You can use store bought egg replacers. This recipe uses chickpea flour.
Ingredients:
- 3/4 cup chickpea flour
- 2/3 cup cold water
- 1/2 tsp black salt (optional, adds egg taste)
- 1/2 tsp turmeric (for health and color)
- 1/2 tsp salt
- dash of pepper
- any chopped veggie ingredients such as onions, green onions, mushrooms, etc.
Instructions:
Mix chickpea flour and water. Add in seasonings. Add in any chopped veggies.
Heat a nonstick skillet over high heat (adding a little olive oil or coconut oil if necessary).
Spoon in ¼ of the batter, swirl around the skillet to spread evenly, and cook for about 2 minutes.
When the top is dry, carefully flip it over and cook the other side for 2 minutes. Remove and cover to keep warm.
Repeat for the remainder of the omelet mix.
