Tofu with Peanut Sriracha Sauce

This is a very simple one skillet meal (well..and a rice cooker!).




1 package firm tofu, drained, pressed, cubed

Vegetable oil (optional)

1 small onion

2 cloves garlic

2 tbls soy sauce

2 tbls ketchup

1/4 cup peanut butter

1 tbls maple syrup

1 cup vegetable stock

2 tbls Sriracha

2-3 green onions, finely sliced



In a large skillet, heat up some oil (or broth) and saute onions and then garlic until softened.

Stir in soy sauce, ketchup, peanut butter, maple syrup, vegetable stock, and sriracha.

Toss in tofu and raise heat to a boil, then reduce heat to simmer until sauce thickens.

Serve over rice and garnish with sliced green onions.
