I was inspired by this video from the always amazing Thee Burger Dude on making pizzas using flour tortillas. I ended up making some tweaks.

Perheat oven to hot. Anything is fine.
In a skillet, I fried up large flour tortillas, one per pizza of course. Just a light spritz of olive oil and press down with a spatula. Turn as needed until the tortilla gets a bit crispy. It does not need to be really crisp as you will finish these up in the oven.
Put the tortilla on a baking sheet and add your toppings. Then bake for 5-10 minutes until it looks done and cheese is more melted.
Options:

Simple cheese pizza- Add a bit of cheese, I used some Violife Cheddar and Violife Mozz, followed by chunks of Violife Feta. A bit of garlic powder, nutrtional yeast, and Italian seasoning. Bake.

Sausage and Peppers- I diced up (one sausage per pizza) a Beyond Hot Italian sausage. Sautee in a bit of olive oil. Chop up with your spatula to make sure you have little bits. Dice red and green bell peppers. Sautee the peppers just a bit to soften them up a little. Add marinara, sausage, and peppers to the pizza. A bit of garlic powder, nutritional yeast. Add mozzarella. Bake.

Pepperoni- Same as above Sausage and peppers… but in this case I used some vegan pepperoni.

Cheeseburger pizza. This one is amazing and I highly recommend giving it a go. To prep, I used about 1/3rd a block of Impossible Beef. You can use Beyond Beef or Gardein Crumbles or ? I sauteed the beef and chopped it into little bits. Alternatively I think you could also sautee some chopped onions.
I did not add anything to the crisped up tortilla. Top with the browned “beef” and add shredded cheddar (or American) cheese. Bake to melt the cheese.
Top with diced onion, tomato, and shredded lettuce (I like Romaine). Top with mustard and ketchup.
